- handful of walnuts (if you reeeally want to go above and beyond, candy them and add a little chili powder...mmm)
- dried cranberries
- mixed greens
- salad dressing (i prefer plum tomato vinaigrette or raspberry pecan vinaigrette)
- optional: grilled chicken breast
okay. what has happened to me? now I love salads?
i was neveeeer a salad person. in fact, i used to be the pickiest eater alive.
no pizza. no sauce. no foods touching on the plate. everything plain.
and now my taste buds are growing up! and it is amazing!
last year i made a salad with my mom, which is very different and heartier than this one -
but i love the simplicity of this sweet and crunchy salad. it's seriously my favorite.
Confession: i had it last night as a bedtime snack.
