cranberry + walnut salad



ingredients:
  • handful of walnuts (if you reeeally want to go above and beyond, candy them and add a little chili powder...mmm)
  • dried cranberries
  • mixed greens
  • salad dressing (i prefer plum tomato vinaigrette or raspberry pecan vinaigrette)
  • optional: grilled chicken breast

okay. what has happened to me? now I love salads?
i was neveeeer a salad person. in fact, i used to be the pickiest eater alive.
no pizza. no sauce. no foods touching on the plate. everything plain.
and now my taste buds are growing up! and it is amazing!
last year i made a salad with my mom, which is very different and heartier than this one - 
but i love the simplicity of this sweet and crunchy salad. it's seriously my favorite.
Confession: i had it last night as a bedtime snack.
what!? who am i!?

  2. I looove these type of salads. I used to not be a salad person either because my Mom would always get like fresh lettuce for salads to go a long with our meals and I didn't like any of the dressings we had! And we had a lot. But i guess im picky too because I don't like ranch, a thousand's islands, even like vinagerette's are just okay in my opinion. But just recently, I got the brilliant idea to add fruit to my salad's and boy does it make a difference! I use like dried mangos, apricots and cranberries along with olive oil and now I'm a salad lover. So yeah, any salad with fruit in it, or a fruit like dressings, I like. And buffalo chicken salads are good too.

  7. Mmmm, there's nothing I love better than a great salad. I like candied pecans and strawberries and a hard boiled egg. Mmmmmm.
